Ramen
A very popular type of Chinese noodles. The noodles are served in a bowl of soup. There are three or four main flavours of soup:
- Shio-aji so-called "salt" flavour
- Shoyu-aji flavoured with soy sauce, and usually having a piece of roast pork floating on top.
- Miso-aji flavoured with Miso.
- Tonkotsu or "pork bone" flavour.
Apart from this, there are also things like leek flavour or, my favourite, mabo dofu, which is spicy tofu floating on top of the noodles.
Ramen is often served with gyoza, fried and then steamed items, or chahan, which is known as egg fried rice in Chinese restaurants.
